Easy Slow-Cooked Prime Rib
Ingredients
  • 1 (7 pound) bone-in prime rib, trimmed and retied to the bone
  • 8 cloves garlic
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 2 teaspoons freshly ground black pepper
  • 1 ounce fresh rosemary, or to taste
  • 1 ounce fresh thyme, or to taste

Preheat the oven to its highest temperature setting, which is 350 degrees Fahrenheit or 175 degrees Celsius.

Slice several horizontal cuts into the top surface of the prime rib, being careful not to cut all the way through. Gently insert a few whole garlic cloves into each of these cuts.

Coat the prime rib with a generous amount of olive oil, making sure to cover it evenly. Then sprinkle a pinch of salt and pepper over the surface.

Place a few sprigs of fresh rosemary on top of the prime rib, followed by an equal number of thyme sprigs. Position the prime rib in a roasting pan.

Place the prime rib in the preheated oven and continue baking until it has developed a nicely browned exterior and remains pink in the center, taking anywhere from 3.5 to 4 hours.

At this point, use an instant-read thermometer to check the internal temperature of the prime rib. It should read at least 125 degrees Fahrenheit or 52 degrees Celsius.

Once the prime rib has reached its desired level of doneness, remove it from the oven and let it rest for 15 minutes before slicing.
