Easy Shredded Beef Tacos
Ingredients
  • 1 large yellow onion, sliced into thin rings
  • 1 (3 pound) boneless beef chuck roast, trimmed
  • 2 (14.5 ounce) cans chili-seasoned diced tomatoes
  • 1 (14 ounce) can beef broth
  • 1 cup cold coffee
  • 1 (4 ounce) can diced green chiles
  • 2 jalapeno peppers, sliced
  • 4 cloves garlic, chopped
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
Instructions
1
Place half of the onion rings in the slow cooker, creating a base layer. Position the chuck roast on top of the onions.
2
Next, combine diced tomatoes, beef broth, and coffee in the slow cooker over the roast. Add diced green chiles, jalapeno peppers, garlic, chili powder, cumin, salt, and black pepper to the mixture. Spread the remaining onion rings evenly over the sauce.
3
Close the lid on the slow cooker and cook on Low for 6 to 10 hours, or until the beef is extremely tender.
4
Once cooked, transfer the chuck roast to a bowl and use two forks to shred the meat. Return the shredded meat to the sauce.
5
Finally, remove the onions from the dish and serve with the tender beef.
