- 1 tablespoon chopped fresh mint, or to taste

Preheat the oven to a high temperature of four hundred degrees Fahrenheit or two hundred degrees Celsius.

To prepare the water, fill a large pot with it and add a generous amount of salt; bring the mixture to a rolling boil. Cook the potatoes in the boiling water until they become soft and tender, taking approximately twelve minutes to achieve this.

Transfer the cooked potatoes to a bowl and mash them with a fork until you reach your desired consistency, leaving some chunkiness intact.

Mix together the peas, pepper, and coriander in a bowl until well combined with the potatoes.

Place the pie crust into a circular 9-inch baking dish and fill it with the potato mixture. Sprinkle some fresh mint leaves over the filling.
