  • 1 tablespoon olive oil
  • 2 teaspoons Montreal-style steak seasoning (such as McCormick®)
  • 1 teaspoon chopped garlic
  • 1 teaspoon Italian seasoning
  • 1 teaspoon mustard powder

Position the roast in a roasting pan, with its bone facing downwards.

Combine olive oil, steak seasoning, garlic, Italian seasoning, and mustard powder in a small bowl, whisking until smooth; evenly coat the roast with this mixture.

Allow the roast to come to a comfortable temperature, approximately 45 minutes before cooking.

Preheat your oven to 450 degrees Fahrenheit (230 degrees Celsius).

Roast in the preheated oven for 20 minutes, then insert a meat thermometer into the thickest part of the roast, avoiding the bone. Lower the oven temperature to 325 degrees Fahrenheit (165 degrees Celsius).

Continue cooking until your roast reaches your desired level of doneness, or an internal temperature of 145 degrees Fahrenheit (65 degrees Celsius) for medium, taking around 1 1/2 to 2 hours.

Remove the roast from the oven and cover it with a sheet of aluminum foil, doubling it over to prevent heat loss. Allow the roast to rest in a warm environment for 10 to 15 minutes before slicing.
