Ingredients
- 2 tablespoons butter
- 3/4 cup finely chopped onion
- 2 cups peeled and diced potatoes
- 1 1/2 cups water
- 1/2 teaspoon dried dill weed
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 3/4 cups milk
- 3 tablespoons real bacon bits
- 1 tablespoon dried parsley, or to taste
Instructions
1
Heat the butter in a substantial cooking vessel over a moderate flame; cook and blend the onion in the hot butter until it reaches a light golden color, approximately 10 minutes. Introduce the potatoes, water, dill weed, salt, and pepper into the saucepan; bring to a rolling boil. Decrease the heat and continue to simmer until the potatoes are tender and most of the water has evaporated, for at least 30 minutes.
2
Combine milk and bacon bits within the potato mixture; return to a boil. Withdraw from heat and blend parsley into the soup.
