Moo Shu Pork Stir-Fry
Ingredients
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon minced garlic
  • 3/4 pound pork tenderloin, fat trimmed and pork cut into 1/4-inch strips
  • 2 tablespoons vegetable oil
  • 2 cups shredded napa cabbage
  • 1 carrot, grated
  • salt and ground black pepper to taste

Combine soy sauce, sesame oil, grated ginger, and minced garlic in a bowl until the marinade is well blended; pour it into a resealable plastic bag. Add pork and coat it evenly with the marinade, ensuring that any air pockets are eliminated; seal the bag. Refrigerate for a minimum of 1 hour or up to overnight.

Heat vegetable oil in a wok or large skillet over medium heat. Add shredded cabbage and grated carrot; stir-fry for 1 to 2 minutes, until they start to soften. Move the cabbage mixture aside and add the pork coated with marinade to the center of the skillet. Cook and stir until the pork is cooked through, taking about 3 to 4 minutes. Draw the cabbage mixture back into the center of the skillet; stir-fry for another minute or two. Season with salt and pepper to taste.
