Easy Mincemeat Fruitcake
Ingredients

  • 2 1/2 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 1 (28 ounce) jar prepared mincemeat pie filling
  • 2 cups candied mixed fruit
  • 1 (14 ounce) can sweetened condensed milk
  • 1 cup chopped walnuts
  • 2 eggs, lightly beaten

Preheat your oven to the desired temperature of 300 degrees Fahrenheit (or 150 degrees Celsius, if you prefer metric). \nNext, take two 9x4-inch baking pans and give them a generous amount of butter to grease them properly. \nTo prevent the cakes from sticking, line each pan with parchment paper and give it a light coating of butter as well. \nIn another bowl, whisk together the flour and baking soda until they're nicely combined. \nNow, in a large mixing bowl, combine the mincemeat, fruit, sweetened condensed milk, nuts, and beaten eggs. Mix everything together until it's smooth and well combined. \nGradually add the flour mixture to the wet ingredients, folding it in until everything is fully incorporated. \nPour the cake batter into the prepared pans and bake them in the preheated oven until they're done. \nCheck on the cakes after about 2 hours, as they should be ready when the centers spring back and the tops are golden brown. \nOnce the cakes are baked, remove them from the oven and let them cool in the pans for a while. \nFinally, transfer the cakes to a wire rack and carefully remove the parchment paper that's been holding them in place.
