  • 1 onion, chopped
  • 1 teaspoon minced garlic
  • 1 teaspoon chili powder
  • 1 tablespoon ground cumin
  • 1 cup uncooked short-grain white rice
  • 1 3/4 cups chicken broth
  • 1/4 cup tomato paste

Preheat your oven to its highest temperature setting, which is 350 degrees Fahrenheit or 175 degrees Celsius.

In a large cooking vessel, heat the oil over a moderate flame. Introduce the onion and garlic into the skillet and stir constantly until the onion becomes transparent. Add a pinch of chili powder and cumin, then continue to cook for approximately 30 seconds. Next, add the rice, chicken broth, and tomato paste to the skillet, stirring until the mixture comes to a boil. Transfer the contents of the skillet to a 1 quart-sized casserole dish and cover it with aluminum foil or a lid.
