Mediterranean Orzo Salad

  • 1 1/2 teaspoons lemon-infused olive oil
  • 1/4 cup sliced black olives
  • 1/4 cup marinated artichoke hearts, drained and chopped
  • 1/4 cup canned chickpeas
  • 1/4 cup roasted red peppers, drained and chopped
  • 2 tablespoons toasted pine nuts
  • 2 tablespoons ricotta salata cheese, crumbled or shaved

Boil a substantial container of salted water until it reaches a rolling frenzy. Submerge orzo in the boiling liquid and stir occasionally to prevent scorching until it reaches a satisfying yet springy texture, approximately 11 minutes. Discard excess water.

Combine orzo with a zesty blend of olive oil infused with lemon zest. Mix in an assortment of ingredients including pitted olives, artichoke hearts, chickpeas, roasted red peppers, pine nuts, and crumbled ricotta salata. Blend the mixture until it's harmoniously cohesive. Chill in the refrigerator to allow flavors to meld and intensify.
