- 3/4 cup white sugar
- 1/2 cup unsalted butter, cubed
- 3 large eggs
- 1 tablespoon grated lemon zest

Collect all necessary components for preparation.

Combine freshly squeezed lemon juice, granulated sugar, softened butter, eggs, and finely grated lemon zest in a 2-quart saucepan.

Heat the mixture over a medium-low flame, stirring continuously to ensure the eggs don't separate and form clumps, until the mixture thickens and bubbles start rising to the surface, approximately 5-6 minutes.

Take the saucepan off the heat source; transfer the mixture to a large bowl and cover it with plastic wrap, preventing a skin from forming on its surface. As the mixture cools, it will thicken further. Refrigerate for later use.
