  • 3 tablespoons baking powder
  • 2 tablespoons vegetable oil
  • 2 large ripe bananas, mashed
  • 1 ripe banana, sliced
  • 3/4 cup maple syrup, warmed - or to taste

Heat a cooking surface, typically made of cast iron or stainless steel, to an intermediate temperature.

Combine eggs in a container and whisk them until they become light and airy, approximately 2 minutes. Add flour, milk, baking powder, and vegetable oil to the eggs and blend until a smooth mixture is formed. Incorporate mashed bananas into this mixture.

Pour small quantities, about 1/4 cup each, of the batter onto the preheated cooking surface. Allow them to cook until tiny holes appear on their surfaces, 2 to 5 minutes; flip and continue cooking until the bottom is golden brown, 2 to 3 minutes. Repeat with the remaining batter. Store cooked pancakes in a warm location until ready to serve. Serve them by placing sliced bananas on top and drizzling with maple syrup.
