  • 4 teaspoons bread flour
  • 1 (.25 ounce) package active dry yeast
  • 1 teaspoon white sugar
  • 3 1/3 cups bread flour
  • 2/3 cup quick cooking oats
  • 2/3 cup whole wheat flour
  • 3 1/2 tablespoons brown sugar
  • 3 1/2 tablespoons vegetable oil
  • 1 1/2 teaspoons salt

Begin by filling a large container with warm water. Mix in 4 teaspoons of bread flour, yeast, and white sugar until they are perfectly blended together and the sugar has fully dissolved. Allow the mixture to sit for about 5 minutes, during which time it should start to exhibit a creamy texture and form tiny bubbles.

Next, combine 3 1/2 cups of bread flour, oats, whole wheat flour, brown sugar, oil, and salt in a large food processor that is equipped with a dough blade attachment. Start the machine and gradually add enough of the yeast mixture to create a cohesive ball of dough that pulls away from the sides of the processor, approximately 1 minute. Continue processing for another 30 seconds to further knead the dough.

Transfer the dough to an oiled bowl and ensure it is evenly coated. Cover the bowl with a damp cloth and let the dough rise until it has doubled in size, roughly 1 hour.

Once the dough has risen, punch it down and divide it into two equal portions. Shape each portion into a loaf by pinching the seams and ends closed.

Prepare two 4x8-inch loaf pans by greasing them with oil. Place the loaves into the pans, making sure they are seam-side down. Allow the dough to rise again until it is one inch above the top of the pans, approximately 1 more hour.

Preheat your oven to 350 degrees F (175 degrees C). Bake the loaves in the preheated oven until they are golden brown on top, about 35 minutes. Remove the bread from the pans and let it cool completely on a cooling rack for an additional 10 minutes.
