  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoons butter, melted
  • 1 1/2 teaspoons ground cinnamon, or as desired
  • 1 teaspoon vanilla extract

Combine milk and vinegar in a small container; let it sit for a few minutes to thicken, approximately 5 minutes.

In another bowl, mix together flour, sugar, baking powder, baking soda, and salt. Blend in egg and melted butter until well incorporated. Gradually add the curdled milk mixture to the dry ingredients, whisking continuously until a smooth batter forms. Add cinnamon and vanilla, stirring until they are fully incorporated into the mixture.

Heat a large skillet over medium heat and spray with cooking oil. Use a spoon to drop the batter, 1/4 cup portions at a time, onto the hot skillet. Cook until bubbles appear on the surface and the edges start to dry, around 3-4 minutes. Flip the pancakes over and cook for an additional 2-3 minutes, until they are golden brown on both sides.
