Ingredients
- 2 tablespoons olive oil
- 1/2 large onion, chopped
- 2 cloves garlic, minced
- 1/2 green bell pepper, chopped
- 1 (16 ounce) can diced tomatoes in juice
- 3/8 teaspoon dried thyme
- 2 tablespoons chopped fresh parsley
- 1/4 teaspoon cayenne pepper
- salt and pepper to taste
- 1 (16 ounce) package frozen cut okra
Instructions
1
Preheat your stove to a medium heat setting, and place a large skillet on the burner.
2
Next, warm the olive oil in the skillet over medium heat, allowing it to reach a suitable temperature.
3
Once the oil is warm, add the onion and garlic to the skillet, stirring occasionally as they cook until they become soft and pliable.
4
Following this, introduce the green pepper into the skillet, stirring constantly as it cooks until it reaches a tender state.
5
Subsequently, drain the tomatoes and reserve their juice, before pouring them into the skillet.
6
Add a pinch of thyme, some parsley, a dash of cayenne pepper, salt, and pepper to the skillet for added flavor.
7
Bring the mixture to a gentle simmer over medium heat, allowing it to cook for 5 minutes.
8
After the initial cooking time has elapsed, add the frozen okra to the skillet, and pour in enough of the reserved tomato juice to cover the bottom of the pan.
9
Finally, cover the skillet and cook for 15 minutes, or until the okra has reached a tender state.
