Ingredients
- 1 (14.5 ounce) can chopped tomatoes
- 4 tablespoons plain yogurt
- 2 cloves garlic, roughly chopped
- 1 (1 inch) piece ginger, coarsely chopped
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 tablespoons masala curry paste
- 4 skinless, boneless chicken breasts, cut into 1-inch pieces
- salt and freshly ground black pepper to taste
- 1/4 cup water
- 1 tablespoon all-purpose flour
- 3 tablespoons chopped fresh cilantro
Instructions
1
Combine the ingredients of tomatoes, yogurt, garlic, and ginger in a blender and blend until they form a uniform consistency.
2
Heat oil in a large frying pan over medium heat, allowing it to warm up before adding the next ingredient. Add the onion and cook until it becomes soft, 3 to 4 minutes, stirring constantly throughout this process. Next, stir in the curry paste and cook for an additional minute, ensuring it reaches its fragrant potential by stirring once or twice during this time frame. Add the blended mixture of tomatoes, yogurt, garlic, and ginger to the pan along with the chicken and mix everything together. Season the dish with salt and pepper to taste.
3
Mix water and flour in a separate bowl before adding it to the chicken mixture in the frying pan. Return the pan to the heat and bring the mixture to a boil, stirring constantly throughout this boiling process, which should take about 5 minutes. Once the mixture has reached a boil, reduce the heat to low and cover it, allowing it to thicken over time, approximately 15 minutes. Finally, sprinkle the dish with cilantro before serving it immediately.
