Easy Chicken Manicotti
Ingredients
  • 2 skinless, boneless chicken breast halves - cubed
  • 1 egg, beaten
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1/2 cup drained, creamed cottage cheese
  • 1/4 cup grated Parmesan cheese
  • 10 manicotti shells
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (8 ounce) container sour cream
  • 1 cup milk
  • 1 teaspoon Italian seasoning
  • 1 cup boiling water
  • 1 cup shredded Cheddar cheese
  • 2 tablespoons chopped fresh parsley
Instructions
1
First, preheat the oven to a high temperature of 350 degrees F (175 degrees C).
2
To begin cooking, heat a medium-sized skillet over a moderate flame, then cook the chicken until it has turned opaque and its juices run clear.
3
In a separate container, mix together the cooked chicken, an egg, some fresh spinach, cottage cheese, and Parmesan cheese. Next, fill uncooked manicotti shells with this chicken mixture.
4
Place the stuffed shells in a 9x13 inch baking dish, making sure they are not touching one another. Arrange them in a way that allows for good air circulation.
5
In another bowl, combine the soup, sour cream, milk, and Italian seasoning. Stir these ingredients together until they form a smooth mixture.
6
Then, pour this soup-like mixture over the shells in the baking dish, making sure to cover them completely. To add moisture and flavor, carefully pour boiling water around the edges of the dish.
7
Finally, cover the entire dish tightly with foil and bake it in the preheated oven for 60 minutes, or until the pasta is tender.
8
Once cooked, sprinkle some Cheddar cheese and fresh parsley over the top of the dish. Let it stand for 10 minutes before serving.
