  • 1 small onion, diced
  • 3 skinless, boneless chicken thighs, cut into cubes
  • 1 skinless, boneless chicken breast half, cut into cubes
  • 6 cups water
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 3 cubes chicken bouillon
  • 1 teaspoon poultry seasoning
  • 3/4 cup milk
  • 1 1/2 cups all-purpose baking mix (such as Bisquick®)

Heat a large pot over medium heat and melt the butter, stirring occasionally until it reaches a smooth consistency. Introduce sliced onions into the pot and cook them gently, stirring frequently until they start to lose their crispness, approximately 3 minutes. Next, add diced chicken and continue cooking while stirring until it reaches a fully cooked state, with no pinkish hue visible in the center, roughly 10 minutes.

Add water, condensed soup, bouillon cubes, and poultry seasoning to the pot, stirring until all the ingredients are well combined. Increase the heat to medium-high and bring the mixture to a gentle boil.

In a separate bowl, combine milk and baking mix. Stir until the ingredients form a smooth dough-like consistency.

Gradually drop spoonfuls of dumpling mix into the simmering soup. Decrease the heat to medium-low, cover the pot with a lid, and let it simmer for 10 minutes. Flip over the dumplings and continue to cook until they are no longer doughy in the center, approximately 10 additional minutes.
