Ingredients
- 1 (14.1 ounce) package double-crust pie pastry, thawed
- 2 (15.5 ounce) cans navy beans, rinsed and drained
- 1 (12 fluid ounce) can evaporated milk
- 2 1/2 cups white sugar
- 1/2 cup butter, melted
- 2 large eggs
- 2 large egg yolks
- 2 tablespoons all-purpose flour
- 2 tablespoons vanilla extract
- 1 teaspoon ground cinnamon
- 1 teaspoon grated nutmeg
Instructions
1
Preheat your oven to the highest temperature setting, which is 450 degrees Fahrenheit or 230 degrees Celsius.
2
Next, position each pie pastry into a circular baking dish with a diameter of 9 inches.
3
To prepare the filling, combine navy beans and evaporated milk in a food processor. Add granulated sugar, melted butter, whole eggs, egg yolks, all-purpose flour, ground vanilla, ground cinnamon, and ground nutmeg; blend a few times until the ingredients are well combined, then continue processing until the mixture is smooth and even, approximately 1 minute.
4
Pour the prepared filling into the pie crusts that have been placed in the baking dishes.
5
Bake the pies in the preheated oven for 15 minutes, then decrease the heat to a lower temperature setting of 350 degrees Fahrenheit or 175 degrees Celsius and continue baking until the filling is set and the crust is golden brown, about 35 additional minutes.
6
Remove the pies from the oven and allow them to cool for 1 hour before slicing.
