Easy Baked Chicken Fajitas

  • 1/4 cup olive oil, divided
  • 2 pounds boneless skinless chicken breasts, cut into strips
  • 1 teaspoon garlic granules, or to taste
  • 1 teaspoon chili powder, or to taste
  • 1 pinch dried oregano, or to taste
  • 1 pinch ground cumin, or to taste
  • 1 (14.5 ounce) can diced tomatoes for chili
  • 1 large onion, cut in strips
  • 1 green bell pepper, cut into strips, or to taste
  • 1 red bell pepper, cut into strips, or to taste
  • 1/2 (4 ounce) can chopped green chiles
  • 1/2 teaspoon seasoned salt, or to taste

Preheat your oven to its highest temperature setting, which is 400 degrees F (200 degrees C).

Next, pour 2 tablespoons of olive oil into a 10x14 glass dish and place it on the bottom. Add your chicken strips to the dish.

Meanwhile, mix 2 tablespoons of olive oil with minced garlic granules, chili powder, dried oregano, and ground cumin in a small bowl. Use this mixture to coat the chicken strips evenly.

Add sliced tomatoes, chopped onion, diced green bell pepper, red bell pepper slices, and chopped green chiles to the dish. Combine all the ingredients thoroughly.

Finally, sprinkle some seasoned salt over the top of the mixture to add extra flavor.

Bake the dish in your preheated oven, with the lid off, until the chicken is cooked through and no longer pink in the center. This should take around 30 minutes. To ensure it's cooked correctly, insert an instant-read thermometer into the center of the dish and wait for it to reach at least 165 degrees F (74 degrees C).
