  • 3/4 onion, diced
  • 5 (10 inch) flour tortillas
  • 1 cup salsa
  • 2 cups shredded Cheddar or Colby Jack cheese

Preheat your oven to the desired temperature of 375 degrees Fahrenheit. Next, take a non-stick cooking spray and give it a light coating to a 9-inch pie dish.

In a saucepan, heat up the refried beans and onions over medium-high heat until they become tender. This should take around 5 minutes.

Place one tortilla at the bottom of the prepared pie dish. Spread a generous amount, roughly 1/3 cup, of the bean mixture over it. Add a few tablespoons of salsa on top of this layer. Then, place another tortilla over the salsa and add more of the bean mixture. Follow this with a substantial amount, about a handful, of cheese and spread it evenly. Repeat the layers, ensuring each ingredient is spread out uniformly over the tortillas. Finally, top it all off with a generous helping of salsa and cheese.

Bake the dish in your oven until the cheese is melted, taking around 15 to 20 minutes.
