  • 1 cup butter, softened
  • 1/4 teaspoon salt
  • 1/4 teaspoon lemon zest
  • 12 cups all-purpose flour
  • 1 egg
  • 1 tablespoon water
  • 2 tablespoons butter, melted

Begin by activating yeast in 1/2 cup of warm water in a large bowl, stirring occasionally until it becomes slightly frothy and bubbly, taking around 5 to 10 minutes.

In a separate bowl, combine 1/2 cup of sugar with warm milk and let it sit until cooled to a lukewarm temperature. Once the mixture has reached this stage, add it to the yeast mixture along with 4 cups of flour. Mix everything together using a wooden spoon until it's well combined.

Transfer the mixture to a dark, warm location and let it rise until it becomes bubbly and has doubled in size, which should take around 2 hours.

In a separate bowl, whisk together beaten eggs, 1/2 cup of sugar, 1 cup of butter, salt, and lemon zest until the mixture is smooth and well blended. Gradually add the remaining 1 cup of flour, one portion at a time, to form a very soft dough.

Using a floured surface, knead the dough for 10 minutes until it becomes soft and elastic. Place the dough in a greased bowl, turning to coat all sides evenly. Cover the bowl with plastic wrap and let it rise in a warm location until it has doubled in size again, taking around 2 hours.

Divide the dough into three equal parts and shape each portion into slightly rounded loaves. Place these loaves on greased baking sheets and let them rise until they have doubled in size, taking around 45 minutes to 1 hour.

In a small bowl, whisk together 1 egg and 1 tablespoon of water to create a glaze. Brush this mixture onto the loaves.
