East African Coconut Candy
Ingredients
  • 2 cups unsweetened grated coconut
  • 1/2 cup coconut milk
  • 1 1/3 cups white sugar
  • 1 cup almond flour
  • 1/4 cup unsweetened grated coconut, or as needed

Combine the grated coconut and coconut milk in a bowl, stirring until they are completely incorporated and there are no visible lumps.

Melt sugar in a saucepan over medium heat, stirring constantly to prevent burning, until it reaches a smooth consistency, approximately 5 minutes.

Take the saucepan off the heat and blend in the coconut mixture and almond flour until they are well combined and there are no visible streaks; let it cool down to a comfortable temperature.

Form the coconut mixture into small, manageable balls.

Place the grated coconut in a separate bowl and roll the balls in it until they are evenly coated.

Refrigerate the coconut balls for at least 15 minutes to allow them to set and become firm.
