  • 1 1/3 cups packed brown sugar
  • 1/3 cup unsalted butter
  • 1 teaspoon ground cinnamon

Begin by combining flour, melted butter, sugar, warm milk, egg, and yeast in a large mixing container. When the dough becomes difficult to stir due to its stiffness, transfer it onto a lightly dusted surface and knead the mixture by hand for several minutes. Allow the dough to rest for approximately 45 minutes, permitting it to rise.

Next, prepare the filling by heating molasses, brown sugar, butter, and cinnamon in a saucepan over medium heat until the mixture reaches a warm temperature. Stir the ingredients together to create a uniform blend, then set the filling aside.

Preheat the pizzelle iron according to the manufacturer's guidelines and spray it with cooking spray for non-stick performance.

Finally, knead the dough briefly before dividing it into twelve equal portions. Roll each portion into a 2-inch ball, and then press one ball at a time onto the center of the preheated pizzelle iron. Remove the cookie from the iron and carefully cut it in half horizontally using a serrated knife.
