In a large mixing bowl, use an electric mixer to whip egg whites until they become frothy and doubled in volume. Gradually add 1/4 cup of granulated sugar while continuously whipping the egg whites until they reach stiff peaks and the sugar is fully incorporated.

In a separate mixing bowl, use an electric mixer to beat egg yolks until they become smooth and creamy. Add the remaining 1/4 cup of granulated sugar and continue whipping until the mixture turns pale yellow and has a smooth consistency. Gently fold the egg yolk mixture into the whipped egg whites.
