Drunken Salsa
Ingredients
  • 4 fresh tomatoes
  • 10 fresh jalapeno peppers, halved lengthwise and seeded
  • 1 (12 fluid ounce) bottle Mexican beer
  • 1/2 cup water, or as needed
  • 1 clove garlic
  • 1 slice onion
  • salt to taste

Put the tomatoes and jalapeños in a saucepan, followed by the beer and just enough water to cover everything.

Bring the mixture to a gentle simmer over medium heat, allowing it to become tender; then take it off the heat and let it sit for a short while, still warm.

Transfer the tomatoes and jalapeños to a blender; add some minced garlic and chopped onion.

Blend everything together until you have a smooth, cohesive mixture; if the blending is being difficult due to the liquid, add some of that cooking liquid in small amounts to help facilitate the blending process.

Taste and adjust the seasoning with a pinch of salt as needed.
