Cook ground beef in a skillet over medium heat, fragmenting the meat into smaller pieces as it cooks, until the beef reaches a rich brown color and has a crumbly texture, approximately 10 minutes. Discard any remaining fat that accumulates during the cooking process and add the taco seasoning blend to the skillet. Remove the skillet from the heat source and allow the mixture to cool down until it reaches room temperature.

Combine the cooked ground beef with shredded Cheddar cheese, a generous amount of ranch dressing, Italian dressing, and finely chopped red onion in a large serving container. Refrigerate the mixture for at least 30 minutes to allow it to chill and firm up, making it easier to handle. Just before serving, gently combine the chilled beef mixture with crisp lettuce leaves and crunchy tortilla chips.
