- 3 cloves garlic, thinly sliced
- kosher salt to taste
- 1/2 cup Dijon mustard, or to taste
- 3 sprigs fresh rosemary, leaves stripped, or more to taste

Preheat your oven to a high temperature of 450 degrees Fahrenheit or 230 degrees Celsius.

Take a sharp knife and make shallow incisions all over the surface of the roast, being careful not to cut too deeply. Gently insert a few slices of garlic into each incision.

Sprinkle a generous amount of salt all over the roast, making sure to cover every surface evenly.

Using a knife or spreader, apply a thin layer of Dijon mustard to the entire roast, ensuring it's evenly coated.

Add a generous sprinkling of chopped rosemary leaves over the mustard coating, spreading it out evenly.

Place the roast in a roasting pan, with the bone side facing downwards.

Bake the roast in the preheated oven for 30 minutes, then reduce the temperature to a moderate level of 350 degrees Fahrenheit or 175 degrees Celsius.

Insert a meat thermometer into the thickest part of the meat, avoiding any contact with the bone.

Continue cooking the roast to your desired level of doneness, or until it reaches an internal temperature of 145 degrees Fahrenheit or 65 degrees Celsius for medium. This should take around 1 and a half hours.
