Combine ground beef, breadcrumbs, sautéed shallot, Dijon mustard, beaten egg, minced garlic, salt, and black pepper in a large bowl. Allow the mixture to chill in the refrigerator for 20 minutes to 2 hours, enabling the flavors to meld together.

Shape the ground beef mixture into six uniform patties.

Heat a skillet over medium heat and arrange pancetta slices in a single layer within the hot skillet. Cook until the pancetta starts to release its moisture, taking about 3 to 5 minutes. Remove the cooked pancetta from the skillet and keep it warm.
