Delicious Zuppa Toscana
Ingredients
  • 1 pound bulk mild Italian sausage
  • 1 1/4 teaspoons crushed red pepper flakes
  • 4 slices bacon, cut into 1/2 inch pieces
  • 1 large onion, diced
  • 1 tablespoon minced garlic
  • 5 (13.75 ounce) cans chicken broth
  • 6 medium potatoes, thinly sliced
  • 1 cup heavy cream
  • 1/4 bunch fresh spinach, tough stems removed

Heat a Dutch oven over high heat, then add Italian sausage and red pepper flakes. Cook until the mixture is crumbly, browned, and no longer pink, taking around 10 to 15 minutes. Remove the sausage from the pot using a slotted spoon and set it aside.

Next, cook bacon in the same Dutch oven over medium heat until it reaches a crispy state, approximately 10 minutes. After removing the bacon from the pot, leave behind a few tablespoons of its rendered fat at the bottom.

Add sliced onions and minced garlic to the pot, stirring until they're softened and translucent, taking around 5 minutes.

Pour in chicken broth and bring the mixture to a rolling boil over high heat. Add diced potatoes to the pot and let them simmer until they're tender enough to be pierced with a fork, approximately 20 minutes.

Reduce the heat to medium and stir in heavy cream. Add the cooked Italian sausage back into the pot, along with a handful of fresh spinach leaves. Continue cooking and stirring until the spinach has wilted and the sausage is warmed through, then serve.
