Ingredients
- 1 (16 ounce) package cremini mushrooms, cut in half
- 1/2 small onion, chopped
- 3 tablespoons olive oil, divided
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (8.8 ounce) pouch cooked brown rice, cooled
- 1/2 cup walnuts
- 1 tablespoon Worcestershire sauce
- 1 tablespoon ketchup
- 2 teaspoons soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1/2 teaspoon kosher salt, or more to taste
- 1/2 teaspoon ground black pepper, or more to taste
- 1 large egg
- 3/4 cup dry bread crumbs
- 8 slices Muenster cheese
- 8 (2 ounce) hamburger buns, split and toasted

Preheat your oven to 450 degrees Fahrenheit (230 degrees Celsius). Cover a baking sheet with aluminum foil.

Place sliced mushrooms and chopped onion on the prepared baking sheet. Drizzle 1 tablespoon of oil over them and mix well to coat.

Roast the mixture in the preheated oven for 10 minutes. Lower the heat to 425 degrees Fahrenheit (220 degrees Celsius) and add cooked black beans to the pan. Continue cooking until the mushrooms and onions are nicely browned, and the black beans have dried slightly on their surface, taking about 5 more minutes.

Remove the mixture from the oven and let it cool for 10 minutes before transferring it to a food processor.

Add cooked rice, chopped walnuts, and pulse the mixture until it's roughly chopped. Add Worcestershire sauce, ketchup, soy sauce, garlic powder, paprika, chili powder, 1/2 teaspoon salt, and 1/2 teaspoon pepper to the processor and pulse until just combined. Crack in an egg and pulse again until just combined.

Transfer the mixture to a medium-sized bowl and mix in bread crumbs until well incorporated. Refrigerate for 10 minutes.

Use your hands to shape the mixture into 8 patties, and season each one with salt and pepper.

Heat 1 tablespoon of oil in a large skillet over medium heat. Add 4 patties and cook, undisturbed, until they're nicely browned on the bottom, about 4 minutes. Flip them over and cook until done, taking around 4 to 5 more minutes. Place a slice of Muenster cheese on top and serve on toasted buns.

Add the remaining 1 tablespoon of oil to the skillet and cook the remaining patties.
