Delicious Fish Chowder
Ingredients
  • 1 pound sliced bacon
  • 1 large onion, chopped
  • 5 medium potatoes, peeled and diced
  • 2 cups water, or as needed
  • 1 1/2 pounds cod fillets, cut into 1 inch cubes
  • 1 (12 fluid ounce) can evaporated milk
  • 1/2 cup whole milk
  • 2 tablespoons butter
  • salt and pepper to taste

Prepare a large cooking vessel by placing the bacon inside and heating it over a medium-high heat source, stirring occasionally until the entire item is uniformly browned, approximately 10 minutes. Transfer the cooked bacon to a plate lined with paper towels and set it aside for later use. Remove excess grease from the cooking vessel, reserving about 1 tablespoon in the process.

Next, add the diced onion to the remaining bacon grease and cook over a medium heat source while stirring constantly until it reaches a tender state, roughly 5 minutes. Add diced potatoes to the pot and fill it with just enough liquid to cover the ingredients. Bring the mixture to a rolling boil before continuing to cook until the potatoes are almost tender, around 5 minutes.

Now, add the fish, evaporated milk, whole milk, and butter to the pot. Stir well and bring the mixture to a boil. Gradually reduce the heat to a low setting and let it simmer for 30 minutes. Season with salt and pepper to taste.

Finally, portion the chowder into individual serving bowls and top each bowl with crumbled cooked bacon.
