Decadent Vegan Apple Pie
Ingredients
  • 2 1/3 cups all-purpose flour
  • 1 cup vegan margarine (such as Earth BalanceĀ®)
  • 1 tablespoon white sugar
  • 1 teaspoon salt
  • 1/4 cup ice water
  • 1 cup brown sugar
  • 1/2 cup vegan margarine (such as Earth BalanceĀ®)
  • 1/4 cup white sugar
  • 1/4 cup rice milk
  • 3 tablespoons all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 7 Granny Smith apples - peeled, cored, and sliced
Instructions
1
Combine the required amount of all-purpose flour, vegan margarine, white sugar, and salt in a food processor; utilize the pulsing function to create a clumpy mixture. Gradually add water, continuing to pulse until a cohesive dough forms.
2
Transfer the dough to a flat surface; engage in kneading for 30 seconds and shape it into a disk. Cover the dough with plastic wrap and refrigerate until firm, approximately 30 minutes.
3
Preheat your oven to the specified temperature of 325 degrees F (165 degrees C).
4
Prepare a clean, flat surface by sprinkling flour on it; then, roll out the dough into two 10-inch crusts. Gently press one of these crusts into a 9-inch pie plate.
5
In a separate saucepan, combine the brown sugar, vegan margarine, white sugar, rice milk, flour, cinnamon, and nutmeg; cook over medium heat while stirring constantly until the margarine has melted and the brown sugar is fully incorporated, taking around 3 to 5 minutes.
6
Place apple slices in a large bowl; pour the brown sugar mixture over them and mix until they are evenly coated. Fill the bottom crust with the apple slices, then cover with the second crust. Use a sharp knife to make cuts in the top crust.
7
Bake the pie in the preheated oven until the crust is golden brown and the apples have reached a semitranslucent state, requiring 45 to 60 minutes.
