Ingredients
- 1 tablespoon vanilla extract
- 1 tablespoon instant espresso powder
- 2 1/2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup mini chocolate chips
- 1 cup white sugar
- 3 eggs
- 1/2 cup vegetable oil
Instructions
1
Preheat the oven to its highest temperature setting, 375 degrees F (or 190 degrees C).
2
Prepare two baking trays by covering them with parchment paper, ensuring they are properly aligned and flat.
3
In a small container, combine the essence of vanilla and powdered espresso; blend until the powder is fully incorporated into the liquid.
4
Sift all dry ingredients - flour, cocoa powder, baking powder, and salt - into a separate container; then mix in the chocolate chips.
5
In a large mixing bowl, combine the dissolved vanilla mixture, granulated sugar, eggs, and oil; whisk until well combined.
6
Add the dry ingredients to the bowl and mix by hand if necessary, stirring until a thick and stiff dough forms.
7
Divide the dough into two equal portions and place them onto the prepared baking trays.
8
Shape each portion into a log, approximately the same length as the tray, and press down firmly with your hands to achieve an even thickness of about 1/2 inch.
9
Bake the dough logs in the preheated oven until they are firm and set, taking about 25 minutes.
10
Remove the logs from the oven and allow them to cool for a short period, around 5 minutes.
11
Once cooled, transfer the logs to a cutting board and slice them into long, thin pieces using a serrated knife.
12
Return the slices to their original baking trays and place them on their sides.
13
Bake the slices in the oven until they are dry, taking about 6 minutes per side.
14
Remove the slices from the oven and allow them to cool completely on wire racks.
