Ingredients
- 1/4 cup pineapple juice
- 1/4 cup coconut oil
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon sea salt
- 3 cups rolled oats
- 1/4 cup sunflower seeds
- 1/2 cup pitted dates
- 1/4 cup roasted almonds
- 1 1/4 cups quick-cooking oats
- 1/2 cup raisins
- 1/2 cup dried cranberries

Preheat your oven to the desired temperature of 200 degrees Fahrenheit (95 degrees Celsius).

Next, lightly coat a baking sheet with a thin layer of oil to prevent sticking.

Mix together pineapple juice and coconut oil in a microwave-safe container, heating it for approximately 1 minute until the mixture is fully liquid. Add vanilla, cinnamon, and sea salt; blend well.

In a separate large bowl, combine rolled oats and sunflower seeds.

Add dates and almonds to an electric blender with the pineapple juice mixture; blend until they are fully incorporated, taking about 15 seconds. Combine this mixture with the oat mixture and stir using a large spoon. Add quick-cooking oats to the mix and blend well.

Pour the entire mixture evenly onto the prepared baking sheet.

Bake the mixture in your preheated oven for 2 hours and 30 minutes.

Remove the baking sheet from the oven and mix in raisins and cranberries.

Continue to bake until the mixture is golden brown, taking an additional 30 minutes.

Allow the baking sheet to cool for 30 minutes before serving.
