  • 1/2 cup warm water, divided
  • 1/2 cup maple syrup
  • 1/2 cup heavy whipping cream
  • 1 tablespoon unsalted butter
  • 1 dash vanilla extract, or to taste

Combine 3 cups of flour, 1/4 cup granulated sugar, yeast, and a pinch of salt in a food processor. Process until the ingredients are well combined. Add warm milk, eggs, and 1/4 cup of softened butter to the processor. Pulse until a dough forms into a ball, resembling a cohesive mass. Transfer this dough to a bowl and allow it to rest at room temperature for about 1 hour, allowing it to rise. Knead the dough and shape it onto a work surface. Divide the dough into 8 equal portions using a cookie cutter or the rim of a drinking glass. Allow these dough circles to rise for about 30 minutes.

Melt 3 tablespoons of unsalted butter in a heavy saucepan over medium heat. Gradually add 1/4 cup of sugar to the butter, stirring constantly until it turns a golden brown color. This should take about 5 minutes. Add 1 cup of milk to the butter-sugar mixture, stirring continuously until it is fully incorporated. Arrange these dough circles in the saucepan, cover it with a lid, and cook over low heat until the dough is cooked through. This should take around 10 to 15 minutes.

In a small saucepan, melt 2 tablespoons of unsalted butter over medium heat. Add 2 tablespoons of flour to the butter, stirring constantly until it forms a smooth paste. Gradually pour 1 cup of milk into the butter-flour mixture, stirring continuously until it thickens. This should take around 3 to 5 minutes. Stir in 1/2 cup of sugar, 1 tablespoon of brandy, and 1 teaspoon of vanilla extract until a smooth vanilla sauce forms. Allow it to simmer for another 2 to 3 minutes.

In a saucepan, combine 2 cups of sugar and 1/4 cup of warm water over medium-low heat. Stir constantly until the sugar is fully dissolved, about 5 minutes. Gradually add in more water, stirring constantly until the mixture is smooth and free of lumps. This should take around 2 to 4 minutes. Mix in 1 tablespoon of unsalted butter, 1 dash of vanilla extract, and 1 tablespoon of maple syrup into the sugar mixture until a thick caramel sauce forms. Allow it to simmer for another 5 minutes.

Transfer the dampfnudel to a serving dish and pour the vanilla sauce over each piece. Top with caramel sauce.
