Ingredients
- 2 pounds baking potatoes, scrubbed
- 1/2 cup low-sodium chicken stock, or more as needed
- 3 cloves garlic, smashed, or more to taste
- 1/2 teaspoon salt
- freshly ground black pepper to taste
- 1 teaspoon chopped fresh parsley, or to taste
Instructions
1
Divide the potatoes into manageable pieces by cutting them into four equal parts.
2
Place these potato portions into a substantial container and cover them with salted water; heat the mixture until it reaches its boiling point.
3
Gradually decrease the heat to a lower, more gentle setting and allow the potatoes to cook until they become soft and palatable, typically taking between 15 to 20 minutes.
4
Remove the potatoes from the water and permit them to air dry completely.
5
Put the cooked potatoes back into their original container.
6
Add a sufficient amount of chicken stock to the potatoes, along with some minced garlic, and use a masher to blend the ingredients together until they form a smooth consistency.
7
If necessary, add more chicken stock to achieve your preferred level of creaminess.
8
Add a pinch of salt and pepper to taste, then garnish the dish with some chopped parsley.
