Ingredients
- 3 tablespoons bacon drippings
- 2 large onions, chopped
- 8 pounds beef stew meat, or coarse ground chili beef
- 4 tablespoons ground red chile pepper
- 4 tablespoons mild chili powder
- 5 cloves garlic, finely chopped
- 1 tablespoon ground cumin
- 1/4 cup sweet Hungarian paprika
- 1 teaspoon dried Mexican oregano
- 3 (10 ounce) cans tomato sauce
- 3 cups water
- 1 (6 ounce) can tomato paste
- 1/4 cup dried parsley
- 1 fresh jalapeno peppers
- 2 tablespoons salt
- 1 cup masa harina flour

Heat a substantial, thick-bottomed vessel over medium warmth. Melt the rendered fat from bacon in this large pot.

Cook and stir sliced onions continuously in the hot, melted fat until they become transparent.

Combine ground beef with minced red chile pepper, a blend of spices including chili powder and garlic, and cumin in a spacious container. Add the cooked onions to this mixture.

Stir constantly until the meat is broken down into a crumbly, richly browned state (almost burnt in color), approximately 30 minutes.

Sprinkle Hungarian paprika and dried oregano over the mixture to enhance its flavor.

Add a rich, tangy tomato sauce, water, concentrated tomato paste, chopped parsley, diced jalapeño peppers, and a pinch of salt to the pot.

Bring this mixture to a rolling boil before gradually reducing the heat and letting it simmer, uncovered, for 1 hour.

During this time, you can gently press the sides of the pot with your fingers to release more heat from the softened jalapeño peppers if desired.

Stir in a generous amount of corn flour.

Continue to cook and stir until the desired consistency is achieved, roughly 30 minutes.
