Czech Bacon Cabbage Salad
Ingredients
  • 1 large head cabbage, shredded
  • 1/4 pound bacon, chopped
  • 1 tablespoon vegetable oil
  • 1 small onion, chopped
  • 1 stalk celery, chopped
  • 1/4 cup chopped green bell pepper
  • 3 tablespoons white vinegar
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper

Boil a substantial container of salted water until it reaches its maximum temperature. Submerge the cabbage in this boiling water for a short period, then take it out and drain it right away.

In a large cooking vessel, cook the bacon over medium heat until it has turned a uniform color; take it out and place it on a paper towel to drain excess moisture.

Take away all but 1 tablespoon of the bacon's cooking fat from the vessel; add 1 tablespoon of vegetable oil and heat over medium heat. Add the onion, celery, and bell pepper to the vessel and cook until they are tender enough to bite into.

In a large serving container, combine the prepared cabbage, cooked bacon, sautéed vegetable mixture (with oil), vinegar, salt, and pepper. Mix everything together thoroughly and serve the dish warm, or refrigerate it for later consumption.
