Curry Udon Soup

  • 1 small onion, cut into bite-size pieces
  • 3 tablespoons water
  • 1/4 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 2 tablespoons all-purpose flour
  • 2 tablespoons red curry powder
  • 5 cups hot vegetable stock
  • 1/4 cup soy sauce
  • 2 teaspoons maple syrup
  • 8 ounces udon noodles, or more to taste

Combine the sliced carrots and chopped onion in a microwave-safe container; add enough water to cover them. Cover the bowl with a lid and cook on high in the microwave until they're soft, approximately 4 minutes.

Heat some oil in a large cooking vessel over medium heat. Mix the flour into the oil to create a smooth paste, taking about 1 to 2 minutes. Add the curry powder and whisk until well combined. Gradually pour in hot vegetable stock, stirring continuously to achieve a smooth consistency, around 3 minutes. Combine the cooked carrots and onion with the curry broth by adding soy sauce and maple syrup, stirring well.

Prepare a large pot of water to reach its boiling point. Cook the udon noodles in boiling water, stirring occasionally, until they're tender yet still retain some firmness when bitten into, typically taking 10 to 12 minutes. Drain the noodles and then add them to the curry broth.
