Ingredients
- 2 cups water
- 1 cup uncooked white rice
- 1 1/2 pounds leftover roast pork, cubed
- 1 (10 ounce) package frozen broccoli, thawed
- 2 (10.75 ounce) cans condensed cream of celery soup
- 1/2 cup mayonnaise
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon curry powder
Instructions
1
First, preheat your oven to a high temperature of 350 degrees Fahrenheit or 175 degrees Celsius.
2
Then, combine water and rice in a saucepan over high heat until they reach a boiling point. Gradually decrease the heat to a lower setting, cover the saucepan with a lid, and let it simmer for about 20 minutes or until the rice is tender.
3
Next, place cooked pork, rice, and broccoli in a large mixing container. Mix well with the soup and mayonnaise, adding a pinch of pepper to taste. Add some curry powder for extra flavor.
4
Transfer the mixture to a 9x13-inch baking dish and cover it with aluminum foil.
5
Finally, bake the mixture in the preheated oven for 45 to 50 minutes or until it is evenly heated through. Remove the foil for the last 5 minutes to allow the top layer to brown slightly.
