Curry Maple Penne
Ingredients
  • 2 cups penne pasta, or to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 1/2 cup sliced fresh mushrooms
  • 1/2 cup chopped bell pepper
  • 1/2 cup pure maple syrup
  • 3 cloves garlic, minced
  • 1 teaspoon white sugar
  • 6 ounces cooked skinless, boneless chicken breast, cut into bite-size pieces
  • 1 1/2 cups heavy whipping cream
  • 2 1/2 tablespoons curry powder
Instructions
1
Begin by filling a large container with water and adding a moderate amount of salt; bring the mixture to a rolling boil.
2
Then, add penne pasta to the boiling water and cook it occasionally until it reaches a tender yet still firm texture, approximately 11 minutes.
3
Drain the cooked pasta and set it aside.
4
In a large, deep pan, heat oil and melted butter over medium-high heat; sauté sliced onions, mushrooms, and bell peppers in the hot oil-butter mixture until they become soft and tender, taking around 5 to 10 minutes.
5
Mix together maple syrup, minced garlic, and sugar with the cooked onion mixture; reduce the heat to a lower temperature and let it simmer until the mixture is almost caramelized, approximately 5 minutes.
6
Add cooked chicken, heavy cream, and curry powder to the maple syrup mixture; cook until the sauce is heated through and has thickened, taking around 7 to 10 minutes.
7
Serve the sauce over cooked penne pasta.
