- 1/2 cup chicken broth
- 1/4 cup vegetable oil
- 1 (2 1/2 pound) whole chicken, rinsed and patted dry
- 1 cup chicken broth
- 3 cups water
- 2 tablespoons fresh lemon juice
- 2 tablespoons butter
- 2 1/4 cups dry couscous
- 1 tablespoon curry powder
- 2 teaspoons onion powder
- 2 teaspoons smoked paprika
- 1/2 teaspoon rubbed sage
- 1/4 teaspoon garlic powder
- 1 bay leaf

Preheat your oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius).

In a small bowl, combine 2 tablespoons of smoked paprika, 1 tablespoon chili powder, 7 1/2 teaspoons of curry powder, 4 1/2 teaspoons of onion powder, a pinch of salt, 1 teaspoon of garlic powder, black pepper, and a small amount of sage. Add some grated ginger to the mix as well.

Mix in 2 tablespoons of freshly squeezed lemon juice, 1/2 cup of chicken broth, and a drizzle of vegetable oil to form a smooth paste.

Apply a thin layer of the paste to the inside cavity of the chicken, then spread the remaining paste all over the exterior, under the skin if possible. If you want to keep things tidy, you can truss the chicken before placing it on a roasting pan.

Place the chicken in the preheated oven and roast until it reaches a safe internal temperature of 165 degrees Fahrenheit (75 degrees Celsius) in the thickest part of the thigh, approximately 90 minutes.

While the chicken is cooking, bring a large saucepan to a boil with 1 cup of chicken broth, water, and 2 tablespoons of lemon juice. Add a pat of butter to the mixture as it comes to a boil.

In a separate bowl, combine 1 tablespoon of curry powder, 2 teaspoons of onion powder, 2 teaspoons of smoked paprika, a pinch of sage, and a small amount of garlic powder.

Once the saucepan has reached a boil, add the couscous to the pot and stir in the spice mixture. Cook for 3 minutes, then turn off the heat and cover the pot to keep the couscous warm until the chicken is ready.
