- 2 cups vegetable broth
- 1 (15 ounce) can garbanzo beans, drained
- 1 cup quinoa
- 1/2 cup diced roasted red peppers
- 1/4 cup toasted almonds
- salt to taste

Prepare the raisins by submerging them in a bowl of warm water, allowing them to rehydrate while you proceed with the rest of the recipe.

In a large saucepan, warm olive oil over medium heat. Sauté chopped onion and minced garlic until the onion becomes soft and its color changes to a translucent state, taking approximately 5 minutes. Introduce curry powder, cumin, chopped cilantro, and grated ginger into the saucepan, stirring constantly until the spices release their aroma, which should take around 30 seconds.

Combine vegetable broth, cooked garbanzo beans, and quinoa in the saucepan. Bring the mixture to a rolling boil before reducing the heat to medium-low and covering it with a lid. Allow the quinoa to become tender, which should take around 20 minutes.

Once the raisins have rehydrated in their water, gently mix them with the cooked quinoa mixture, roasted red peppers, and toasted almonds. Sprinkle a pinch of salt over the dish to enhance its flavor.
