Curried Coconut Seafood

  • 2 cups water
  • 1 cup uncooked brown rice
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, crushed
  • 1 pound cod fillets, cut into chunks
  • 1 1/2 tablespoons curry powder
  • 2 teaspoons chili powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • salt and pepper to taste
  • 1 (14 ounce) can coconut milk
  • 1 (16 ounce) package frozen stir-fry vegetables
  • 1 tablespoon cornstarch

Boil water and rice in a large pot until it reaches a rolling boil.

Place the lid on top, lower the heat to a low simmer, and let it cook for 45 minutes.

Heat oil in a skillet over high heat. Sauté the onion and garlic for 1 minute, then add cod and sprinkle with a blend of spices including curry powder, chili powder, turmeric, cumin, salt, and pepper.

Pour in coconut milk and add frozen vegetables to the skillet. Cover it and let it cook for 10 minutes, or until the vegetables are tender and the cod can be easily flaked with a fork.

Carefully pour 1/2 cup of the liquid from the skillet into a separate bowl and mix it with cornstarch.

Stir the mixture back into the skillet to thicken the sauce, then serve it over the cooked rice.
