Curried Baked Cauliflower
Ingredients
  • 1 large head cauliflower
  • 4 tablespoons vegetable oil
  • 1/2 teaspoon ground turmeric
  • 1 small onion, minced
  • 2 tomatoes, pureed
  • 1 teaspoon garlic powder
  • 3 teaspoons garam masala
  • salt to taste
  • 1/2 head lettuce
Instructions
1
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Remove the majority of the cauliflower's stem and position the entire head in a baking dish.
2
In a small frying pan, combine two tablespoons of oil and turmeric. Heat the mixture over low heat until it is well combined. Brush the cauliflower head with this oil and turmeric mixture, making sure to coat it evenly.
3
Place the cauliflower in a preheated oven and bake for 30 minutes, allowing it to tenderize and absorb the flavors.
4
While the cauliflower is cooking, heat two tablespoons of oil in a separate frying pan over medium heat. Add the minced onions and sauté until they reach a medium brown color, stirring occasionally.
5
Mix in the pureed tomatoes, garlic powder, garam masala, and salt. Allow this mixture to simmer for 10 minutes, stirring occasionally, until the flavors have melded together.
6
Arrange a layer of lettuce leaves on a serving plate. Place the cooked cauliflower head on top of the lettuce leaves.
7
Pour the tomato curry mixture over the cauliflower, making sure it is evenly coated. Serve the dish hot and enjoy.
