Cumin-Spiced Beets with Onion and Garlic
Ingredients
  • 2 tablespoons canola oil
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 1/2 teaspoons cumin seed
  • 2 tablespoons all-purpose flour
  • 5 medium beets, peeled and quartered
  • 2 tomatoes - peeled, seeded and chopped
  • 1 1/2 cups water
  • 1 teaspoon salt

Preheat a medium-sized saucepan over high heat, allowing it to warm up thoroughly.

Next, pour in a generous amount of oil into the saucepan and cook sliced onions and minced garlic until they become soft and translucent.

Add a pinch of ground cumin seeds to the saucepan and continue cooking for another 2 minutes, stirring occasionally.

Now, sprinkle a small amount of flour into the saucepan and cook for 1 minute more.

Combine diced beets, crushed tomatoes, water, and a pinch of salt in the saucepan.

Finally, lower the heat to a low setting, cover the pan with a lid, and let it simmer for 30 to 45 minutes, or until the beets are tender.
