- 1 large onion, chopped
- 3 cloves garlic, chopped
- 1 green bell pepper, chopped
- 1/4 teaspoon saffron powder
- 1 teaspoon ground cumin
- 1 teaspoon salt, or to taste
- 1 teaspoon black pepper
- 2 tablespoons fresh lemon juice
- 1 bay leaf
- 1 (8 ounce) can tomato sauce
- 1 pound potatoes, peeled and quartered
- 1/4 cup dry white wine
- 1/4 cup capers, drained
- 1 cup raisins
- 1/4 cup chopped green olives
- 1/4 cup olive oil
- 1 (10 ounce) can baby peas, drained

Preheat your cooking vessel by placing it over medium heat.

Add the rabbit pieces, along with the sautéed onion, garlic, and green pepper to the preheated vessel.

Sprinkle a blend of spices over the rabbit pieces, including saffron, cumin, salt, pepper, a squeeze of lemon juice and the bay leaf.

Pour water over all the ingredients in the vessel, then bring the mixture to a rolling boil.

Allow the rabbit pieces and vegetables to simmer gently for 20 minutes, infusing them with flavor.

Introduce the potatoes into the mixture and continue to cook for an additional 20 minutes, or until they are tender.

Add a sweet and tangy mixture of raisins, capers, white wine, tomato sauce, olives and olive oil to the vessel.
