- 3 cloves garlic, chopped
- 1 (14.5 ounce) can diced tomatoes
- 1 (12 ounce) can chicken chunks, drained
- 1/2 cup chopped red bell pepper
- 1/2 cup raisins
- 1/2 cup stuffed green olives, sliced
- 1 tablespoon red wine vinegar
- 1 teaspoon ground oregano
- 1/4 teaspoon ground cumin
- 2 bay leaves

Heat a generous amount of olive oil in a substantial skillet over medium heat. Allow the oil to warm up, then carefully add sliced onions and stir constantly until they become soft and translucent, approximately 5 minutes pass. Next, add minced garlic to the skillet and continue stirring until aromatic, roughly another minute elapses.

Subsequently, combine diced tomatoes, cooked chicken, sliced red bell pepper, plump raisins, pitted olives, a splash of red wine vinegar, dried oregano, ground cumin, and fresh bay leaves into the skillet with onions. Stir the ingredients together until they reach a uniform temperature, taking around 5 to 7 minutes to achieve. Finally, carefully remove and discard the bay leaves before presenting the dish
