Ingredients
- 1 onion, sliced
- 3 pounds pork tenderloin
- 3 tablespoons minced garlic
- 1/2 cup orange juice
- 3 tablespoons red wine vinegar
- 1 lemon, juiced
- 1 tablespoon ground cumin
- 1 tablespoon grill seasoning (such as Montreal Steak Seasoning®)
- 1 teaspoon salt
- 1 teaspoon ground red pepper
- 3 bay leaves
- 2 tablespoons grated lemon peel
Instructions
1
Begin by placing thinly sliced onions at the bottom of a slow cooker vessel. Next, position a pork tenderloin on top of the onions. Sprinkle minced garlic over the onions and pork to add depth of flavor. Pour a mixture of orange juice, apple cider vinegar, and freshly squeezed lemon juice over the pork to create a tangy marinade. Sprinkle a blend of cumin, grill seasoning, salt, red pepper flakes, dried bay leaves, and grated lemon zest over the pork to enhance its flavor profile. Close the lid and cook on low heat for 6-7 hours, or until the pork is extremely tender. To serve, slice the cooked tenderloin into 1 1/2-inch thick pieces and arrange them on a serving platter. Finally, drizzle the accumulated juices over the top of the sliced pork for added flavor and visual appeal.
