Crunchy Asian Broccoli Slaw with Pineapple and Toasted Ramen
Ingredients
  • 2 (3 ounce) packages any flavor ramen noodles
  • 1/2 cup sunflower seeds
  • 1 (16 ounce) package broccoli coleslaw mix
  • 1/2 cup chopped fresh pineapple
  • 1/2 cup chopped fresh cilantro
  • 2 green onions (white and green parts), chopped, or more to taste
  • 1/2 cup white sugar
  • 1/2 cup cider vinegar
  • 1/2 cup olive oil
  • 1/2 teaspoon sesame oil
  • 2 pinches cayenne pepper, or to taste
  • 1/2 teaspoon freshly ground black pepper

Mash the ramen noodles into smaller pieces and separate the seasoning packets from them.

Preheat a skillet over medium-low heat and cook the crushed ramen noodles along with sunflower seeds in it until they are nicely browned and have a pleasant aroma, taking around 5 to 10 minutes.

Mix the broccoli coleslaw mix, pineapple chunks, chopped cilantro, and green onions in a large serving container.

Blend the sugar, vinegar, olive oil, sesame oil, cayenne pepper, black pepper, and ramen seasoning packets together in a bowl until the dressing is well combined. Pour this dressing over the slaw mixture and thoroughly mix it to coat everything evenly. Add the toasted ramen noodles and sunflower seeds just before serving time.
